At the arrival I will offer you cofee break, and I will give you a lab coat for the access to the production area. I’ll bring you along a complete tour to discover all the steps of Parmigiano Reggiano’s production. We’ll see where the animals are bred and where the milk is mould. We’ll go into the cheese factory during milk processing and we'll witness in cooking and making cheese wheels. We’ll see then the process of salting and maturing up to enter the huge “caveau”, where thousands of cheeses wheels are guarded and laid out in long rows in the silent maturation rooms and where the scent of cheese will smell so nice and exciting that we won’t be able to resist till the final tasting of cheese and local typical products. Parmigiano Reggiano bike tour in Parma
Parma is bike-friendly city! The bike is the ideal means of transport to discover the ducal city with its parks, monuments, history and charm. I want suggest you an half day bike tour to enjoy my city and our typical products! We start early morning (at 8:30) or in the afternoon (at 3pm) to visit a Parmigiano Reggiano cheese factory to see all production chain, the different rooms and the huge storage with inside a lot of wheels!!! There is also a tasting of 3 different Parmigiano Reggiano ages. The cost for the tasting is not included in the experience: 8€ per person in the morning and 6€ per person in the afternoon. Free for kids under 12 years. After, we ride the bike in the countryside to see our crops and our nature! We come back in the city through a bike lane near the river and visit the city center with our bikes through its restricted traffic zones. Half Day Emilia Foodie Experience
Emilia Foodie Experience is an extraordinary journey through a landscape of rivers, plains and hills and the jewels of the Italian gastronomic tradition! We will discover the secrets of Parmigiano Reggiano and Prosciutto di Parma, their ancient origins and unparalleled balance of knowledge, man’s passion and nature’s bounty. We will be able to follow the whole Parmigiano Reggiano production chain, starting from the feeding of milking cows. We will see the cheese production process in full swing and we will visit all the rooms of the dairy: the production, the shaping and the salting rooms and the amazing warehouse! The dairy experience will end with a guided vertical tasting of delicious Parmigiano Reggiano cheese. You will learn how to taste it like a cheese sommelier, analyzing it through the sense of sight, smell and taste. On our way to the Prosciutto di Parma Plant, we will stop at the foot of the Castle of Torrechiara to take some pictures. During the visit to the plant we will be able to observe the production process of this delicacy and learn about its important history and all the standards which must be complied with, to fully understand the the origins of the unique character of Parma ham: the sweetness! Looking for an authentic experience, far from the major tourist flows, to discover the soul and traditions of the Italian Food Valley? Come and discover Emilia Romagna and its food excellences, Parmigiano Reggiano and Prosciutto di Parma at a slow pace, relying on the experience and professionalism of a local guide. Visiting a Parmigiano Reggiano dairy with us, you will be able to follow the whole production chain, from the feeding of milking cows to the forming of the curd in the typical copper kettle. You will be able to observe closely the cheese master’s experienced hands during the breaking of the curd with the “spino” and his deft movements during the scooping of the cheese out of the kettle. After this unique experience you will visit the resting, salting and ageing rooms with their enveloping scents. The visit will end with a tasting, a real pleasure for the senses! We will then transfer to the hills of Parma to visit a plant where the inimitable Prosciutto di Parma is produced. We will stop on the way at the foot of the mediaeval castle of Torrechiara to take some pictures. The tour will end with a lunch of typical Parma delicacies (a selection of cured meats, fresh home made pasta and traditional cakes) and wine from the Parma Hills region. Don’t have a car to reach us? Don’t worry, offer a transport service from the centre of Parma. Once reach my house we will teach you to create two types of pasta with: Tagliatelle Ravioli (ricotta and seasonal ingredients) While pasta cooks you can also taste cold cuts and cheeses typical of this area with a good wine (red or white - you can choose). Siamo Laura, Flavia, Trilli e Maya e condividiamo la stessa passione: cercare (e mangiare) tartufi. Ti piacerebbe venire a cercare dei tartufi nella nostra tartufaia sugli Appennini tosco-emiliani? Se ti piacciono gli animali e ami la natura, hai trovato l'esperienza giusta per te! Verrete accompagnati da noi e dalle nostre simpatiche lagottine nella ricerca del tartufo: rimarrete a bocca aperta di fronte all'innata capacità di questi cani di rintracciare la presenza di tartufi e di riportarli al loro padrone... Ovviamente nessuno lavora per niente, e anche loro pretendono un compenso in "würstel"! Avrete modo di provare anche voi in prima persona cosa vuol dire essere "un tartufaio" e vi insegneremo tutto quello che c'è da sapere sul tartufo: come riconoscerli, come conservarli, quante specie esistono e qualsiasi domanda vi venga in mente! Meeting the king of cheeses
I'll pick you up (or jump in your car/bus/van/etc) and bring you to the cheese factory. You will wear headsets (if you're more than 2), so that you'll be able to hear me...the production room can be really noisy! We'll visit the cheese factory (it will take more or less 1.5 hours) and, if you wish to, have a tasting of this wonderful cheese (paid separately). You can buy Parmigiano Reggiano after the visit and have it vacuum-packed. Other things to note Parmigiano Reggiano's production starts early in the morning. We should be ready to leave at around 8:30 am, at the latest. The visit will last roughly 2 hours.

We will see the rooms where for decades the vinegar barrels rest and as still today this precious gold food is prepared according to an ancient family tradition that is handed down from generation to generation. Una sala completamente affrescata e terminata nel 1727. Questo meravigliosa degustazione comincia con l'assaggio dei migliori prodotti locali: tagliere misto di salume, Parmigiano Reggiano DOP di tre diverse stagionature e miele, giardiniera artigianle accompagnati da due calici di vino locali, Lambrusco e Malvasia e termina con l'assaggio della famosa sbrisolona, un delizioso dolce con le mandorle.
